We are Sanda Coyle and Robin Whitson. Although not specifically Biblically referenced, we think our spiritual gift is the Spirit of the Stomach. Simply put, WE FEED PEOPLE.
We use food to bring people together, to comfort, to celebrate, to nourish both body and soul. It is only fitting that we would create The Spirit of the Stomach as a place to share our gift and love of food.
Most religions talk about spiritual gifts given to man from God. Moses spoke of the promises of future spiritual gifts in the book of Numbers. The prophet Joel predicted future generations would have spiritual gifts poured out on them in chapter 2 of Joel. The Apostle Paul wrote about the spiritual gifts of Knowledge, Wisdom, Faith, Healing, Miracles, Prophecy, Teaching, Service and more throughout the New Testament.
When Covid hit hard in May of 2020, we searched for a way to spiritually feed our neighborhood that was so very disconnected in fear. We stumbled upon a vegetable wholesale distributor in San Antonio, Texas that would allow us to buy cases of fresh, restaurant quality produce at cost. Produce Monday was started and became a community produce market. Weekly, we sold fresh, seasonal produce at or near cost to friends, neighbors and others. In an average week, we supply over 900 pounds of fruits and vegetables to neighbors, friends, and the food insecure. Much of the leftover produce is provided to food insecure families through outreach ministry and the San Antonio Food Bank.
With so much produce, we have gotten creative with our cooking. We perfected canning and food processing making food shelf stable. We had to buy a new freezer. In the past year, we made lots of salsa, pickles and jam! And, we learned the basics of composting for unusable produce.
We became the fruit and vegetable experts. Weekly, we would be asked questions:
- How do you pick a good watermelon?
- How do you store Lettuce?
- How do you clean a pomegranate?
- What can I do with leftover Zucchini?
- How do you cook eggplant?
Now, we want to share our Spirit of the Stomach love for food with you. We hope you enjoy our passion for produce and people.
