Crust

  • 2 cups       Flour
  • ½ cup       Powdered Sugar
  • 1 cup        Butter – softened

Sift together flour and powdered sugar. Cut in butter until mixture clings together. Press into greased 9×13 Pyrex(can line with pa. Bake at 350 degrees 25-30 minutes until lightly browned.

Filling

  • 4 eggs – beaten
  • 2 cups sugar
  • ⅓ cup + 2 Tbl lemon juice (fresh)
  • ¼ cup flour
  • ½ tea baking powder

Combine eggs, sugar, and lemon juice. Beat well. Sift together flour and baking powder. Stir into egg mixture. Pour over hot baked crust. Bake 350 degrees 25-30 minutes until light brown.

Cool and dust with powdered sugar.
